Hello. I hope all is well. Did you have a nice Thanksgiving? We stayed home this year and had a “quiet day?” with the family. I thought you might enjoy this picture of everyone cooking for the special supper. Each one shared something and it all came together beautifully. It makes my heart rejoice to see them all working and visiting with one another. Actually, my kitchen looks like this on any number of days for no special occasion at all.  We have so much to be thankful for. It was truly a blessed day.

I LOVE Broccoli…especially in soup

It is always a wonderful encouragement when you find out that a food you really love is incredibly good for you. Thus was the case when Joseph recently brought a large portion of broccoli heads home from the farm where he works. I instantly decided to make cream of broccoli soup. Yum. Now, if you have never made  cream of broccoli soup, you are in for a special treat. Cream of broccoli soup is, as it’s name implies, creamy, full of broccoli, and oh so delicious.

It’s SO good for you, too

Whenever I feature a particular food in a recipe, I check, and often share its nutritional benefits. I don’t overly worry about it because I know that the food God made for us to eat is healthy, especially if it is seasonal and not overly processed. Still, it is nice to know what health benefits come from which foods.  It was not surprising to me then, when I looked up the nutritional information on broccoli, to see that it was good for us. What did surprise me was just how beneficial these “little green trees” actually are. Every article I read proclaimed broccoli as a superfood, a powerhouse of nutrition, or an all-star food. 

Did you know that broccoli fights cancer? Research has also shown broccoli to be effective in lowering blood pressure and cholesterol levels. It improves skin, balances hormones, and promotes the health of gums and teeth. Really, the list just goes on and on.

Soup Base
  1. Saute celery and onion in butter in soup pot until tender. Add raw broccoli and broth. Cook on low for 8-10 minutes.
  2. Put soup in blender, a cup at a time and blend until smooth. Set aside in additional pan or mixing bowl until all soup is processed.
  3. Rinse soup pot and melt 3 Tablespoons butter in rinsed pan. Stir in flour and cook for a few moments. Add milk and stir until smooth. Cook until it is thick and bubbly. Salt and pepper. Stir the broccoli and broth mixture back into the pan with the soup base. Cook until this is warmed through.
